A Tasty ‘Lazy’ Peach Cobbler Recipe Worth Trying

My mom holds the title of “fruit cobbler queen” in my book. She can make this classic Southern dessert using any fruit, and every batch is sweet and buttery with just a hint of tartness. Her peach cobblers are my favorite, and making them is a real labor of love — she gently poaches the fruit to remove the skin and whips up a biscuit topping by hand. The long preparation time is also why this dish only makes an appearance on holidays and special occasions.

Like mother, like daughter: I also love making peach cobbler. But I’ve been looking for a simpler process that doesn’t involve too many steps. Thankfully, a “lazy” peach cobbler recipe recently came across my radar and changed everything.

How To Save Time Preparing Peach Cobbler

Making delicious, homemade peach cobbler can be easy — if you take a few shortcuts. Here are three tips that’ll reduce the amount of time it takes to prepare:

  • Use a peach pitter. A peach pitter saves you time and energy for removing the fruit’s core in seconds. Try: OXO Good Grips Peach Pitter (Buy from OXO.com, $10.99)
  • Leave the skins on. There’s no need to peel the peaches beforehand because the skin softens once the cobbler is baked – making them easy to chew.
  • Make a batter topping. Mixing together a batter topping is quick and requires less elbow grease rather than making a biscuit topping.

‘Lazy’ Peach Cobbler Recipe

This cobbler recipe from The Peach Truck comes together in about 10 minutes – once the peaches are pitted and sliced. Self-rising flour gives the cobbler topping a light and fluffy texture. You can buy that from the baking aisle or make your own using this simple trick.

Ingredients (Serves about 6):

  • 4 cups fresh ripe peaches, pitted and sliced
  • 1 stick unsalted butter
  • 1 cup self-rising flour
  • 1 cup white sugar
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • Ice cream (for serving)

Directions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Place butter in dish and allow to melt in oven.
  3. In a bowl, mix 1/2 cup sugar with peach slices. Set aside.
  4. In second bowl, whisk together flour, 1/2 cup sugar, milk, and vanilla. Pour mixture over melted butter – do not stir to combine.
  5. Spoon peaches into batter – without mixing.
  6. Bake 40 minutes or until golden brown and bubbly.
  7. Let cool 5 minutes and serve warm with ice cream.

My Taste Test

Having 10 large peaches on hand, I doubled this recipe when making it. The freshly baked cobbler was a sight to behold and the wait before taking the first bite wasn’t long –  thankfully!

Trying a spoonful of the cobbler, I noticed right away that the peaches were tender without being mushy. The topping had an airy texture that complemented the softness of the cooked fruit. Plus, the sugar mixed with the peaches’ juices created a sweet syrup that kept the cobbler spongy and moist.

This straightforward recipe is going directly in my back pocket. Plus, it’s peach season — so I’ll have extra fruit that I can put to good use!
